Ceviche is a Latin American seafood dish, made with fresh raw fish or seafood marinated in citrus juices, usually lime or lemon. The citrus juices "cooks" the fish, which is then mixed with onions, cilantro, and chili peppers for a refreshing, zesty flavor. Often served chilled, it can be garnished with avocado, corn, or sweet potatoes. Registration fee of $10 plus $15 food fee to instructor.
